One of the main ingredients of a carrot cake is precisely this vegetable: the carrot. Do you know what are its health benefits?

Recipe 1: Traditional carrot cake

When preparing, the cake should have a consistency that allows it to be cut into two parts to be filled with the frosting.

Ingredients

For the cake:

  • 350 g carrots
  • 250g of flour
  • 4 eggs
  • 120 g sugar
  • 150 g brown sugar
  • 250 ml olive oil
  • 1 teaspoon of cinnamon
  • 1 pinch of salt
  • 2 tablespoons of yeast

For the icing:

  • 800 grams of cream cheese
  • 140 grams of icing sugar

Preparation

  • First, wash the carrots well, peel and grate them, before preheating your oven to 180º.
  • Combine the flour, salt, cinnamon and baking powder in a bowl. We advise you to sift the flour.
  • Then, in another bowl, beat and mix in the eggs the sugar, white and brown, until it dissolves well.
  • Then, gradually add the flour with the eggs to the bowl and stir well with a hand mixer until a homogeneous mixture is obtained.
  • Then add the grated carrots and stir to incorporate them into the mixture.
  • Then it’s the turn of the oil: add it very slowly to the mixture while stirring so that it integrates perfectly.
  • You can now grease a mold and pour the mixture into it. Put it in an oven preheated to 180º for 45 minutes.
  • Ideally, the container or mold should have a diameter of about 20 cm. This way, the resulting cake will be tall, which we will need later since we will cut it into two halves.
  • When the necessary time has passed, the cake should be removed from the oven and allowed to cool.
  • In the meantime, prepare the icing. Just mix the icing sugar with the cream cheese well.
  • When the cake is cold, cut it in half horizontally. On one of the halves, place half of the frosting, then lay the other half of the cake on top.
  • Finally, with the rest of the frosting, cover the top. Let it cool in the fridge and… bon appétit!

Second recipe: Vegan carrot cake

This cake also includes a vegan option and an additional healthy nutrient like ginger.

Ingredients

  • 300 grams of wholemeal flour
  • 270 g brown sugar
  • 300 g carrots
  • 200 ml of water
  • 180 g sunflower or olive oil
  • 1 pinch of salt
  • Cinnamon
  • 1 vanilla pod
  • 1 pinch of ground ginger
  • 1 teaspoon of baking powder

Preparation

  • First, wash, peel and grate the carrots. In addition, preheat the oven to 180º.
  • Then sift the flour into a bowl and add the sugar, salt, baking powder, cinnamon and powdered ginger to it, that is, all the powdered ingredients except the vanilla. Mix well.
  • In another bowl, put the water, oil, vanilla and mix everything well.
  • Then add the contents of the first bowl to the second, little by little, stirring constantly to obtain a homogeneous and uniform mixture.
  • Then grease a suitable oven container and pour the mixture into it. Then, bake for about 40 to 45 minutes.
  • Finally, when the cake is finished, let it cool.
  • You can now enjoy your vegan carrot cake .

As you can see, it is not difficult to prepare these recipes. Just mix the ingredients and bake a delicious cake in the oven.

If you also want to give it a special touch, you can add chopped almonds on top to decorate it and get even more flavor. If the almond doesn’t convince you, try raisins, for example.
